Research Scientist (Food Chemistry)

What you will be working on

  • Be part of a team that performs research and development to provide verification support for nutrient analysis on various food samples, agricultural produce, raw ingredients, flavourings, culture media for cultivated meat, etc.
  • Perform extraction and chemical analysis of complex samples using various instrumental techniques and data analytics
  • Lead/support activities in the areas of procurement, safety and operations at the lab
  • Coordinate and support industry presence for seamless integration into the facility
  • Conduct courses and supervise students in their project/internship

What we are looking for

What you will be working on

  • Drive product development initiatives in the area of plant-based food innovations and alternative protein with the industry.
  • Supervise and lead project collaborations with agencies, industry and/or other Institute of Higher Learning (IHLs).
  • Identify and strengthen the direction of plant-based innovation, food waste valorisation, alternative protein, healthier food formulations, etc.

Research Scientist (Food Packaging Material)

What you will be working on

  • Provide food packaging materials research and development, towards shelf-life extension of foods
  • Develop sustainable packaging alternatives to replace single-use plastics
  • To conduct active packaging technologies in the area of improving barrier properties, incorporation of antimicrobial agents, anti-oxidants, modified atmosphere packaging techniques, etc.
  • Support the procurement of necessary packaging test equipment through writing of equipment specifications.

  • Design, propose and perform research projects in alternative protein, extrusion technology and food fermentation.
  • Lead /collaborate with industry partners on projects.
  • Conduct sensory evaluation and characterization of alternative meat with various analytical equipment e.g. textural analyser, Differential Scanning Calorimeter (DSC), etc.
